Cook Chicken until lightly browned. Combine the rest of the ingredients. Stir until mixed. Pour over chicken Bring to a boil. Turn heat to low. Partially cover or vent
Simmer 15-20 minutes
Serve over Rice

Cheese Muffins
1 cup flour
1 beaten egg
Pinch of cayenne pepper
2 cups grated cheese
2 tsp. baking powder
1/2 cup milk
SIFT dry ingredients. MIX in cheese and add beaten egg and milk. BAKE quickly in hot oven (400 degrees F) about 10 to 15 minutes.

Peppermint Fudge
1 2/3 cups granulated sugar
2/3 cup Evaporated milk
2 tablespoons butter or margarine
1/4 teaspoon salt
2 cups miniature marshmallows
1 1/2 cups semi-sweet chocolate chips
1/2 teaspoon vanilla extract
1/4 teaspoon peppermint extract
1/4 cup crushed, hard peppermint candy (candy canes work great!)
COMBINE sugar, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat.
STIR in marshmallows, chocolate chips, vanilla extract and peppermint extract. Stir vigorously for 1 minute or until marshmallows are melted. Pour into foil-lined 8-inch-square baking pan; cool for 1 minute. Top with candy, pressing in slightly. Chill for 2 hours or until firm. Lift from pan; remove foil. Cut into pieces.

White Chicken Chili
Ingredients:
1-2 lbs. chicken breasts, boiled and shredded (can use canned chicken or turkey chunks)
4 - 15 oz. cans northern white beans, do not drain
2 - 14 oz. cans of chicken broth
4 - 4 oz. cans chopped green chilies (can add or subtract depending on spiciness wishes)
1 - T. dried minced onion
2 - tsp. garlic powder
2 - tsp. salt
2 - tsp. cumin
2 - tsp. oregano
1 - tsp. black pepper
Pour all ingredients into a large pot. Bring to slow boil, add sour cream and milk, half and half or whipping cream.
This makes a lot! Usually half of this feeds a family.

1 T. Margarine
1 14.5 can diced tomatoes with liquid
1 can mushrooms
1 Can black olives
2 tsp. oregano
1 lb hamburger browned
12 oz. cooked spaghetti
2 c grated cheese
1 can cream of mushroom soup
1/4 c. water
grated parmesan cheese
Saute onion, pepper and butter
add tomatoes, mushrooms, olives, and oregano
add hamburger
simmer 10 minutes
layer 13x9 pan
1/2 spaghetti
1/2 meat mixture
1 cup cheese
Repeat
Top with cream of mushroom soup mixed with water
top with parmessan cheese
Bake 350 degrees 35 minutes
This is super tasty and makes quite a bit for a few days of left overs
