High Protein Whole Wheat Pancakes

1 Cup Cottage Cheese
1 Cup Rolled Oats
6 egg whites
1/2 Cup whole wheat flour
1/4 Cup Greek Vanilla Yogurt
1 tsp. Vanilla
2 TBSP honey
1/4 tsp. cinnamon

Combine all ingredients in a blender.
Heat large skillet or large frying pan or griddle to medium heat (between 325-350)

Pour all batter onto greased skillet.
Cook until small bubbles start to appear and edges start to look dry.

Flip and continue to cook another 1-2 minutes

Top with fresh berries and syrup or whatever you like!

I made these this morning and they were DELICIOUS!

Granola

  • 1/3 cup honey
  • 1/3 cup light brown sugar
  • 6 tablespoons butter, melted
  • 1 tablespoon vanilla
  • 4 cups old-fashioned rolled oats
  • 1/3 cup wheat germ
  • 1/2 cup sweetened coconut
  • 1/2 cup sliced Almonds
Heat the oven to 300ยบ. Line cookie sheet with aluminum foil. In a large bowl, combine the honey, brown sugar, butter, and vanilla. Add the oats and wheat germ, then stir the mixture until it's evenly blended.
  1. Spread the granola onto the prepared cookie sheets and bake for 20 minutes, stirring once halfway through to keep it from burning and encourage even baking. Remove the pans from the oven and stir the granola again. Add the coconut and almonds, then return the pans to the oven to bake 10 minutes more. Note: Keep an eye on the granola during this period and stir it occasionally so that it doesn't burn. Remove the granola from the oven and stir it one last time. Allow it to cool completely on the pans, about 15 minutes. When it has cooled, stir in dried fruit if desired, then transfer the granola to an airtight container. The granola can be stored for up to four weeks.

    You can also add dried fruit like cranberries mango pineapple etc. The one I made for NYC had half the 1/3 of wheat germ and the rest filled with flax seed, so really you can add anything and it will taste good :) Enjoy!

Cinnamon Rolls

2 T. dry yeast
(dissolve in warm water with 1 t. sugar)
1/2 cup warm water
1 cup hot milk
1/2 cup sugar
1/2 tsp. salt
2 eggs (beaten well)
1/2 cup margarine (melted)
4-5 cups flour

* * Mix milk, sugar, salt, eggs, margarine, water.
* * Stir in flour until dough is easy to handle.
* * Place in bowl & let rise until double in size.
* * Shape into rolls & let rise 30 minutes.
* * 375 degrees for 20 minutes.

Granola

6 C. oatmeal (regular, NOT instant)
1 C. coconut
1/2 C. nuts (optional)
1/2 C. wheat germ
1 tsp. cinnamon
1/2 C. honey
1/2 C. oil
1 tsp. vanilla
3/4 C. grape nuts

* * Stir in a large, stainless steel mixing bowl. Then you can put the bowl right into the oven!
* * Bake at 350 degrees for 10 minutes. Stir, and cook 10 minutes again. Continue until granola is as crunchy as you want (I cook for a total of 40 minutes)
* * You can add a little more honey or oil if you want the granola to cluster. I also like adding a little brown sugar to give it extra flavor. Next time I'm going to try maple syrup!

Belgian Waffles

(Some of the amounts are strange, because I split the original recipe in thirds)

2 cups white flour
2/3 tsp. salt
1/3 tsp. sugar
2 1/3 tsp baking powder
2 eggs
2 cups milk
1/2 stick of margarine or butter (melted prior to addition)
OPTIONAL: vanilla extract

Cinnamon Rolls

2 T. dry yeast
(dissolve in warm water with 1 tsp. SUGAR)
1/2 C. warm water
1 C. hot milk
1/2 C. sugar
1/2 t. salt
2 eggs (beaten well)
1/2 C. margarine (melted)
4-5 C. flour

* Mix milk, sugar, salt, eggs, margarine, water.
* Stir in flour until dough is easy to handle.
* Place in bowl to let rise until double in size.
* Shape into rolls and let rise 30 minutes.
* Bake at 375 degrees for 20 minutes.

* I like to sprinkle brown sugar on the dough, along with the cinnamon and sugar, before rolling up. I also like to put the frosting on the cinnamon rolls as soon as I take them out of the oven; it makes the frosting spread nicely and keeps the rolls from drying out as quickly. Yum, yum!

Yummy Creamy Coffee Cake

1 c. sugar
1 c. margarine
2 eggs
2 tsp. vanilla
1 Tbsp. vinegar
1 c. milk
2 1/2 c. flour
1 tsp. soda
1 tsp. salt

Topping:
1/2 c. granulated sugar
1 Tbsp. cinnamon
2/3 c. brown sugar

* Cream sugar, margarine, and eggs; add vanilla. Mix 1 tablespoon vinegar in 1 c. milk and add alternately with flour, soda, and salt. Spread half dough in 13 x 9" greased pan. Sprinkle half topping and cover with rest of dough. Sprinkle rest of topping and optional chopped nuts over top. Bake 35 minutes at 350 degrees.

Breakfast Crepes

3 eggs
1/2 cup milk
1/2 cup water
3 tablespoons melted butter
1 cup flour
1 to 2 tablespoons sugar
1/4 teaspoon salt

** Combine all ingredients in blender container. Blend, scraping sides with rubber spatula until smooth.
