Chicken, cooked and cubed
8 oz. sour cream
1 can cream of chicken soup
1 package Ritz crackers
Butter (optional)
Line casserole dish bottom with chicken. Mix soup and sour cream then pour on chicken. Crush Ritz crackers on chicken mixture. Butter chopped on top. Bake 25-30 minutes at 350 degrees.
* I like to season my chicken with Creole; makes it nice and spicy. Also, I skip the butter on top.
* Serve with rice!!

Yummy Creamy Coffee Cake
1 c. sugar
1 c. margarine
2 eggs
2 tsp. vanilla
1 Tbsp. vinegar
1 c. milk
2 1/2 c. flour
1 tsp. soda
1 tsp. salt
Topping:
1/2 c. granulated sugar
1 Tbsp. cinnamon
2/3 c. brown sugar
* Cream sugar, margarine, and eggs; add vanilla. Mix 1 tablespoon vinegar in 1 c. milk and add alternately with flour, soda, and salt. Spread half dough in 13 x 9" greased pan. Sprinkle half topping and cover with rest of dough. Sprinkle rest of topping and optional chopped nuts over top. Bake 35 minutes at 350 degrees.

2 c. brown sugar
1 c. corn syrup
* Boil 5 minutes. Pour over popped corn. Makes enough for 3 loads of hot air popcorn.

Orange Julius
6 oz. frozen orange juice concentrate
1 c. milk
1 c. water
1/2 c. sugar
1 tsp. vanilla
Ice cubes until thick & icy
* combine all ingredients in blender for 30 seconds (except ice cubes). Add ice cubes a few at a time until drink is thick & icy. Serve at once. Other juice concentrates can be used, as well as fresh fruit or frozen, in place of concentrate.

Fresh Peach Pie
18 Large Marshmallows > microwave 45 sec. and stir bring to room temp.
1/4 c. evaporated milk
1 c. whipping cream >Mix together
whip together and add sugar to taste
Fold in sliced peaches
Put in Graham Cracker Crust
Refridgerate
I usually use 10 peaches and use 2 pie crusts

Lasagna
1 lb ground meat
1 26 oz jar Ragu sauce
8 dried lasagna noodles
1 beaten egg
1 16 oz container cottage cheese
1/4 cup grated Parmesan cheese
1/2 lb shredded mozzarella cheese
Boil lasagna noodles for 10-12 minutes or until tender but still firm. Meanwhile, brown meat then add favorite Ragu sauce and set temperature to warm. For filling, combine egg, cottage cheese, and the Parmesan cheese. Set aside. Drain noodles then rinse with cold water.
Spread 1/2 cup of the sauce over the bottom of a 2-qt rectangular baking dish. Layer half of the cooked noodles in the bottom of the dish, overlapping as necessary. Spread with half of the filling. Top with half of the remaining sauce and half of the mozzarella cheese. Repeat layers.
Bake in a 375 degree oven for 30-35 minutes or until heated through. Let stand 10 minutes before serving. Should make 8 servings.

1 T. Butter > Saute 3 to 4 minutes
1/2 onion diced
Add
1 4 oz. diced green chilis
1 can cream of chicken soup >Cook all this together
1 tsp. chili powder
1/2 c. milk
1 c. fat free sour cream
2 Cups cooked chicken chopped
Spread on flour taco shells put sauce on each shell with cheese
Roll up spread rest of sauce on top and cheese
Cook 350 until cheese in melted on top (1/2 hour)
Or in Jeremy's case you like Jalapenos instead of green chilis
